Why are collards special?

Collards exemplify centuries of history that integrated cultural practices and foodways of multiple continents. In addition to their first-rate nutritional benefits, growing collards is easy as the greens thrive in areas around the globe. And there are so many easy ways to turn collards into delicious meals: as a cooked “mess” of greens, raw in salads, wraps for sandwiches, soups, stews, casseroles, or baked crisp as a delicious snack. Collards are real life super-heroes.
