CUNY Graduate Center, Brooklyn, NY

Eva is a PhD student in cultural anthropology, where she studies seed saving as creative processes of future making. When Eva isn’t reading, writing, or thinking about seeds, she is usually cooking or knitting – or wishing she could fit a garden in a tiny Brooklyn apartment.

Why are collards special?

Collards possess such a depth of flavor, history, and meaning, and learning about and with them is such a special process to be a part of!

What’s Your Favorite Way To Eat Collards?

Green Gumbo!! I usually add white beans and serve with a giant hunk of cornbread for the perfect winter meal.
