Chris Smith is a seed saver and farmer who loves to write. He is executive director of the Utopian Seed Project, a crop-trialing non-profit working to celebrate food and farming. His book, The Whole Okra, won a James Beard Foundation Award in 2020 and he is the co-host of The Okra Pod Cast.

Why are collards special?

Collards are my favorite ‘Southern’ green, and since working with The Heirloom Collard Project I have had the chance to experience the beautiful diversity of this crop. I love their flavor, their versatility and the many friendships that collards have led me to!

What’s Your Favorite Way To Eat Collards?

I have been lucky to work with many chefs and experienced collards in a plethora of delicious formats, but when cooking at home I still love to stir fry them on high heat with some onions, shallots or garlic, salt and a splash of vinegar!
